Coconut Cream Pie
Coconut Cream Pie is an moderately easy dinner. Made with 1/2 c. sugar, 3 tbsp. cornstarch, 1/4 tsp. salt, 1 c. shredded coconut and 3 egg yolks, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Mix thoroughly in a saucepan the sugar, cornstarch, salt, shredded coconut and egg yolks.
Stir in gradually until smooth a mixture of evaporated milk and water.
Cook and stir over low heat until thickened, about 10 minutes.
Remove from heat and stir in vanilla.
Cover and cool thoroughly.
Put in 9-inch baked pastry shell.
Spread with meringue.
Sprinkle with 1/2 cup coconut. Bake 7 to 8 minutes at 400Β°.
Cool completely before cutting with wet knife.
