Coconut Chicken Breasts is an moderately easy dinner. Made with 4 boneless chicken breasts, 2/3 c. buttermilk pancake mix, 2/3 c. flaked coconut, 1/2 tsp. paprika and 1/2 c. sweetened condensed milk, this recipe delivers authentic, satisfying flavors. Heat oven to 375°.
Mix dry ingredients together; set aside. Mix sweetened condensed milk and mustard together.
Dip chicken in milk mixture, then coat in coconut mixture.
Bake in ungreased 9 x 12-inch pan at 375°.

Bake 35 to 40 minutes or until tender.
