Coconut Cake
Coconut Cake is an moderately easy dinner. Made with 1 1/2 c. sugar, 3/4 c. shortening, 1 tsp. lemon extract, 2 1/2 c. flour and 1 tbsp. baking powder, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Cream 1/2 sugar with shortening and flavoring.
Combine flour, baking powder and salt; add to creamed mixture and milk.
Beat egg whites and add remaining 1/2 sugar then fold into cake mixture after coconut has been added to cake mixture.
Bake at 350Β° for 30 minutes or until done.
