Coconut Butterball
Coconut Butterball is an easy dinner. Made with 1 c. butter or margarine, softened, 1/4 c. confectioners sugar, 1 tsp. vanilla, 2 c. sifted flour and 1 1/2 c. flaked coconut, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cream the butter and sugar.
Gradually add flour.
Add vanilla; beat.
Stir in coconut.
Shape into 1-inch balls; place on cookie sheet.
Refrigerate 15 minutes.
Bake at 350Β° for approximately 15 minutes or until delicately browned.
While cookies are still warm, roll in confectioners sugar.
Makes approximately 4 dozen cookies.
