Coconut Bread
Coconut Bread is an moderately easy dinner. Made with 2 sticks butter, softened, 2 c. sugar, 4 eggs, 4 tsp. coconut extract and 2 c. sour cream, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cream together butter and sugar.
Beat eggs and extract, then sour cream.
Add coconut.
Stir together the flour, baking soda and baking powder.
Beat into batter.
Divide between 2 lightly greased loaf pans and bake at 350Β° for about 45 minutes or until bread tests clean when a toothpick inserted in the center comes out without any clinging batter or wet crumbs.
