Cinnamon Cucumber Rings
Cinnamon Cucumber Rings is an moderately easy dinner. Made with 2 gal. cuke rings (use big cukes), peel, cut crosswise 1/4-inch thick and hollow out seeds, 2 c. lime, 1 c. white vinegar, 1 tbsp. alum and 2 bottles red food coloring, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Cover cuke rings and lime with water; soak for 24 hours.
Drain and wash with cold water 3 times.
Mix 1 cup white vinegar, alum and food coloring.
Cover with water; simmer 1 hour and then pour off.
Mix 2 cups white vinegar, sugar, 2 cups water and cinnamon sticks.
Heat and pour over cukes.
Let stand 24 hours.
Bring cukes and syrup to a boil.
Cool and pack in jars.
Can also use small package of cinnamon hearts.
