Cinnamon Apple Rings
Cinnamon Apple Rings is an moderately easy dinner. Made with 2 gallon of overripe cucumbers peeled and seeded, sliced 1/2 inch thick, 2 c. hydrated lime, 8 1/2 qt. of water, 1 c. vinegar and 1 tbsp. alum, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Mix cucumbers and hydrated lime to water, when dissolved then place rings in lime water, let stand for 24 hours.
Drain rings, wash in cool water then pour cold water over the rinds and let set for 3 hours.
Drain and add vinegar, alum, bottle red food coloring and enough water to slightly cover, heat and simmer for two hours.
Drain and cover with vinegar, water, sugar cinnamon, pkg. of red hots.
Bring to a boil and pour over rings and keep lid on tight and let stand over night.
Drain, reheat syrup and repeat the above for three mornings.
The fourth morning, heat, put in hot jars and seal.
