Place the beans and water in a very large kettle.

Soak overnight. Add baking soda.

Bring to a boil and skim off the foam.

Remaining ingredients, except parsley, fresh chopped onions vinegar.

Bring again to a boil.

Reduce heat to low.

Partially cover and cook for 1 hour. Remove lid and continue cooking for 45 minutes longer or until beans are tender and the mixture is very thick.

Cooking time will vary, since the beans moisture, content and age.

Add parsley. Ladle soup bowls and serve with fresh chopped onions and a little pitcher of vinegar. Yields 6 servings.
