Christmas Cake From Australia is an impressive dinner. Made with 1 stick margarine, 1 c. sugar, 1/2 (no. 2 1/2) can crushed pineapple, drained, 3 eggs and 1 (8 oz.) pkg. dates, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Cream the margarine and sugar. Add eggs, one at a time.
Mix well. Sift dry ingredients together, except for the baking powder. Dissolve soda in buttermilk; add dry ingredients and buttermilk alternately.
Fold in preserves and pineapple.
Last, add dates, cherries, raisins and pecans.
Bake in 4 layers at 350Β° for 30 minutes.
May take a little longer.
When cold, put together with filling.
