Chow-Chow Relish
Chow-Chow Relish is an impressive dinner you can prepare in about 1 hour 44 minutes. Made with c. chopped green tomatoes, c. chopped cabbage, c. chopped onions, c. sweet red pepper, chopped and seeds removed and c. pickling salt, this recipe delivers authentic, satisfying flavors. Mix vegetables together.
Dissolve salt in 8 cups of water and pour over vegetables.
Let stand in cool place overnight, then drain.
If too salty, rinse and drain again.
Tie spices in cheesecloth.
Add to vinegar and 1 cup water.
Let simmer 5 minutes.
Add sugar; stir until dissolved.
Add vegetables and simmer for 15 minutes.
Bring to a boil and pack boiling ingredients in hot jars and seal.
