Chocolate Zucchini Cake
Chocolate Zucchini Cake is an moderately easy dinner. Made with 4 eggs, 1 1/2 c. oil, 3 c. sugar, 3 c. grated zucchini and 2 sq. unsweetened chocolate, melted, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Beat together eggs, oil and sugar until light in color.
Stir in zucchini. Stir in melted chocolate; mix well.
Stir together flour, salt, baking powder, soda and cinnamon.
Set aside 1/4 cup. Add flour mixture to egg mixture, mixing just to blend.
Toss nuts with the remaining 1/4 cup flour mixture. Add to cake mixture and stir to blend.
Spoon into greased tube pan or 2 (9 x 5-inch) loaf pans.
Bake at 350Β° for 1 hour or until cake tests done with toothpick.
