Chocolate Zucchini Cake
Chocolate Zucchini Cake is an moderately easy dinner. Made with 3 sq. unsweetened chocolate, 3 c. unsifted flour, 1 1/2 tsp. baking powder, 1 tsp. baking soda and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Melt chocolate over hot water.
Let cool.
Grease and flour a 10-inch tube pan.
Sift dry ingredients (set aside).
In a large bowl, beat eggs until thick and light (high speed).
Add sugar, 1/4 cup at a time, beating well after each addition at low speed. Add dry ingredients and mix until smooth.
Add zucchini and nuts with a spoon until well combined.
Bake 1 hour and 15 minutes. Cool in pan on wire rack for 15 minutes.
Remove and ice with Philly cream cheese.
