Chocolate Zucchini Bread
Chocolate Zucchini Bread is an moderately easy dinner. Made with 2 c. sugar, 1 c. oil, 3 eggs, 3 c. flour and 1 tsp. each: salt, cinnamon and baking soda, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cream sugar and oil.
Add eggs.
Gradually add flour, salt, cinnamon, baking soda, baking powder, vanilla and cocoa.
Mix well.
Mixture will be real thick!
Add zucchini.
(If your zucchini is very wet, drain and press out excess liquid or your bread will be too wet.)
Add almonds.
Bake at 350Β° for 1 hour for a regular bread pan or for 45 minutes for the mini loaves.
