Chocolate Mint Pudding
Chocolate Mint Pudding is an moderately easy dinner. Made with 1/2 c. sugar, 1/3 c. unsweetened cocoa, 1/4 c. cornstarch, 3 c. 1% low-fat milk and 1 tbsp. crème de menthe, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Combine sugar, cocoa and cornstarch in a medium saucepan. Gradually add milk, stirring with a wire whisk until smooth.
Cook over medium-low heat, stirring constantly, 25 to 30 minutes or until mixture is thickened.
Remove from heat.
Stir in crème de menthe and vanilla.
Spoon mixture into individual dessert dishes. Cover and chill thoroughly.
Yield
7 servings.
