Chocolate Covered Cherries
Chocolate Covered Cherries is an moderately easy dinner. Made with 1 large jar maraschino cherries, 1 large bag chocolate morsels, 1/2 sq. paraffin, 1 box powdered sugar and 1/3 c. evaporated milk, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Drain cherries well.
Melt chocolate and paraffin in top of double boiler, cool slightly.
Make a fondant with the powdered sugar, evaporated milk and vanilla.
This should be of a stiff dough consistency that can be handled.
If too stiff, add a little of the cherry juice.
If too thin, add more powdered sugar.
Take a small amount of dough and flatten to about the size of a half dollar, wrap around cherry.
Use a toothpick as holder and dip in melted chocolate and paraffin.
Place on waxed paper and let set 2 hours before handling.
