Chocolate Chip Vanilla Gems
Bakery-style vanilla muffins shot through with mini chocolate chips. Tender, lightly sweet, and a foolproof school-morning bake.

Preheat oven to 400Β°.
Combine flour, sugar and baking powder in a bowl.
Set aside.
In a separate bowl, mix well the oil, milk, egg and vanilla.
Add the liquid ingredients to the dry and stir just until combined.
Don't overmix or the muffins will be tough. Gently fold in the chocolate chips.
Spoon batter into 24-cup mini muffin pan or 12-cup regular muffin pan that is sprayed lightly with cooking spray.
Bake 15 - 20 minutes or until golden brown. You can use regular chips if you use regular muffin pans only. Enjoy!
