Chiquita Chicken
Chiquita Chicken is an moderately easy dinner. Made with 4 boneless, skinless chicken breasts, cooked and cut into bite size pieces, 1 small onion, finely chopped, 2 tbsp. oil, 1/2 c. chicken broth and 12 corn tortillas, cut in 1-inch strips, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Saute onion in oil.
Add soups.
Stir until smooth.
Add milk and cheese.
Stir until cheese is melted.
Add chicken broth and chilies.
Place a layer of tortilla strips on the bottom of a greased 2-quart casserole dish.
Pour some sauce on that and add a layer of chicken.
Repeat, ending with sauce.
Bake at 350Β° for 35 to 45 minutes.
