Chilled Potatoes In Creamy Herb Sauce is an moderately easy dinner. Made with 4 red new potatoes, 1 c. frozen peas, thawed, 1/2 c. chopped green pepper, 2 tbsp. fresh parsley and 1 1/2 c. plain nonfat or low-fat yogurt, this recipe delivers authentic, satisfying flavors. In a medium saucepan, bring small amount of water to boil. Add potatoes; cook, covered, 25 to 30 minutes or until tender. Drain and cool.
Slice and place in a bowl.
Toss with peas and bell pepper.
Add yogurt, parsley, green onions, basil, salt and pepper. Toss gently to coat.
Cover; chill until ready to serve. Yields 8 servings.
