Chili Rellenos Casserole
Chili Rellenos Casserole is an moderately easy dinner. Made with 1 can (27 oz.) can ortega green chiles, 1 lb. cheddar cheese, grated, 1 lb. jack cheese, grated, 5 eggs and 1 large can evaporated milk, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Grease large (10 x 14-inch) roaster pan.
This is better than a 9 x 13-inch Pyrex.
Clean the chiles and remove all seeds, dry on paper towels.
Lay them side by side to cover the bottom of the roaster.
Distribute the whole pound of Cheddar cheese over the top of the chiles.
Beat eggs and milk together and pour over the Cheddar and chiles.
Top all with the pound of Jack cheese and bake in a 350Β° oven 40 to 45 minutes, or until golden brown. Serve plain or with salsa.
