Chicken Zucchini Casserole
Chicken Zucchini Casserole is an moderately easy dinner. Made with 1 chicken, boiled, boned and diced, 2 or 3 zucchini, 3/4 c. shredded carrots, 1/2 c. chopped onion and 1/2 cube melted oleo, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Set chicken aside.
Dice zucchini in 1-inch chunks; cook until tender and set aside.
Simmer onion and carrots in oleo until tender.
Mix all together with cream of chicken soup; add 2 1/2 cups herb Croquette dressing.
Pour in casserole dish; add the other half cup dressing mix on top of casserole and bake at 350Β° for 30 or 40 minutes.
Makes a whole meal.
