Chicken-Zucchini Casserole
Chicken-Zucchini Casserole is an moderately easy dinner. Made with 3/4 c. shredded carrots, 2 c. shredded zucchini, 1/4 c. grated onion, 2 c cooked diced chicken (2 chicken breasts) and 1 (10 3/4 oz.) can 99% fat-free mushroom soup, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Saute carrots, zucchini and onion in skillet sprayed with Pam. Add chicken.
Mix in 1 1/2 cups stuffing, seasoning, 1 can mushroom soup and 1 can water (can add more water if you want it less dry).
Put in 2-quart casserole.
Cover with rest of stuffing.
Makes approximately 8 servings.
