Chicken-Stuffed Tomatoes
Chicken-Stuffed Tomatoes is an moderately easy dinner. Made with 4 large ripe tomatoes, peeled, 3 c. cubed, cooked chicken, 1/4 c. finely chopped celery, 4 green onions, finely chopped and 2 hard-boiled eggs, chopped, this recipe delivers authentic, satisfying flavors. Remove pulp from tomatoes to form 1/2 inch tomato shells. Turn shells upside down on paper towels to drain.
Combine chicken, celery, onions, eggs and relish in a medium bowl.
Mix mayonnaise, sour cream and seasoned salt; add to chicken mixture. Toss lightly until mixed.
Add salt and pepper to taste.
Fill tomatoes with chicken salad and serve garnished with salad greens.
