Chicken Stock
Chicken Stock is an moderately easy dinner. Made with 1 stewing chicken, 1 large onion, 2 carrots, 1/2 c. lemon juice and 1/4 tsp. pepper, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Remove skin and cut chicken into pieces.
In deep pot, cover chicken with water.
Add remaining ingredients.
Cover and bring to boil.
Lower heat and simmer for 2 hours.
Strain, reserving chicken and vegetables.
May be frozen.
Serving size 1 cup.
