Chicken Stew
Chicken Stew is an moderately easy dinner. Made with 5 lb. chicken, cut in pieces, 1/4 c. oleo, 1 small onion, sliced, 2 stalks celery, sliced and 1 carrot, sliced, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Wash chicken and pat dry with paper towels.
In a large pot, brown chicken in oleo on both sides.
Remove from heat.
Add onion, celery, carrot, lemon, black pepper and bay leaf.
Cover with boiling water.
Bring to a boil; then reduce heat and cover. Let simmer 45 minutes.
Add salt; cook, covered, one hour until chicken is tender.
