Chicken Scampi
Chicken Scampi is an moderately easy dinner. Made with 3 whole broiler-fryer chicken breasts, boned, skinned and cut in bite size pieces, 1/2 head broccoli, cut in bite size pieces, 1 lb. linguine, 1/2 stick butter and 1/3 c. olive oil, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
In saucepan with salted water, place broccoli and steam 4 minutes.
Boil linguine and drain.
In large frypan, place butter and olive oil over medium heat.
Add onion and pepper and saute 5 minutes.
Remove from pan and reserve.
To frypan, add chicken. Continue to cook, stirring about 5 minutes.
Return onion and pepper to frypan.
Add cooked broccoli and saute for 5 more minutes.
Sprinkle with lemon juice, salt and pepper.
Place linguine in serving dish, top with chicken vegetable mixture and sprinkle with cheese.
