Chicken Salad Pockets
Chicken Salad Pockets is an moderately easy dinner. Made with 1 1/2 c. cubed, cooked chicken, 1/2 c. sliced celery, 2 tbsp. raisins, 2 tbsp. chopped green onions and 1/2 c. mayonnaise, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
In medium bowl, combine chicken, celery, raisins and green onions.
In small bowl, combine mayonnaise, lemon juice and curry powder; blend well.
Pour dressing over chicken mixture; mix well. Arrange 1/4 of spinach leaves and 1/4 of apple slices in each pocket with the pieces extending slightly over edge of pocket. Spoon 1/4 of chicken salad mixture into each pocket.
Makes 4 sandwiches.
