Chicken Rotel
Chicken Rotel is an moderately easy dinner. Made with 3 c. chicken, boiled, 2 large bell peppers, 2 large onions, chopped, 1 stick oleo and 1 (10 oz.) can ro-tel tomatoes (spicy hot), this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Boil chicken until tender; let cool.
Remove meat from bones. Cook spaghetti in 2 cups water or leftover chicken broth.
Set aside.
Saute onions and peppers in oleo.
Add cheese and stir until melted.
Add tomatoes and chicken and mix.
Stir in cooked spaghetti; add peas last.
Fold in evenly.
Bake at 350Β° for 35 minutes or until bubbly hot.
Makes a 3-quart casserole.
