Chicken Rotel
Chicken Rotel is an moderately easy dinner. Made with 2 c. cheddar cheese, 6 chicken breasts or equivalent, 1 onion (1 c.), 1/4 c. bell pepper and 1 can cream of chicken soup, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Boil chicken and debone.
Save about 1 pint of broth (skimmed). Saute onion and bell pepper in 1 tablespoon butter for 3 to 5 minutes in a large skillet or heavy pan.
Add soups, Ro-Tel and enough of the broth to make a medium sauce.
Add the chicken and seasonings (salt, pepper and garlic).
Boil 2 minutes.
Crumble enough Doritos to cover the bottom of a 9 x 13-inch pan about 1/2-inch thick.
Pour chicken mixture over the Doritos and sprinkle cheese on top.
Bake at 350Β° for 20 to 25 minutes, until cheese is melted and mixture is bubbling.
Good with Mexican potatoes and beans.
