Chicken Monterey
Chicken Monterey is an moderately easy dinner. Made with 4 (6 oz.) chicken breasts, boned and skinned, 1/2 c. zesty italian dressing, 1/2 c. margarine, salt and pepper to taste and 1 lg. onion, sliced in rings, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Salt and pepper to taste.
Fix 2 cups Minute rice, using regular or wild rice.
Place in baking dish with the rice on the bottom, grilled chicken breasts next and then cooked vegetables. Top with good helping of Monterey Jack cheese.
Bake or microwave only long enough for cheese to melt.
