Chicken Hoppin John
Chicken Hoppin John is an moderately easy dinner. Made with 1 pkg. chicken combo pack, 2 slices bacon, 1/2 tsp. salt, 1/8 tsp. pepper and 3/4 c. uncooked medium grain rice, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
In a large fry pan, cook bacon over medium heat until crisp. Drain, crumble and reserve.
Drain all but 2 tablespoons drippings from fry pan.
In the same fry pan, place chicken and cook, turning, until brown on all sides.
Sprinkle with salt and pepper. Adjust temperature to low.
Cover and simmer for 15 minutes.
Add rice and onion to chicken in fry pan.
Dissolve bouillon in water. Add hot sauce and stir.
Pour over chicken.
In a medium bowl, mix black-eyed peas, parsley and thyme.
Add to fry pan.
Stir gently to mix.
Cover and cook about 25 minutes.
Sprinkle with bacon.
