Chicken Hoppin' John
Chicken Hoppin' John is an moderately easy dinner. Made with 1 pkg. cut up chicken, 2 slices bacon, 1/2 tsp. salt, 1/8 tsp. pepper and 1/2 c. uncooked rice, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

In large pan, cook bacon until crisp.
Remove, drain and crumble and reserve.
Drain all but 2 tablespoons drippings from pan.
In same pan, place chicken and cook, turning until brown on all sides.
Sprinkle with salt and pepper.
Adjust temperature to low.
Cover and simmer chicken for 15 minutes.
Add rice and onion to chicken in frypan.
Add chicken broth, hot sauce and stir.
Pour over chicken.
In bowl, mix black-eyed peas, parsley and thyme. Add to frypan.
Stir gently to mix.
Cover and cook about 25 minutes longer or until tender.
Sprinkle top with bacon and serve.
