Chicken Gumbo
Chicken Gumbo is an impressive dinner. Made with 2 1/2 to 3 lb. chicken breast, 8 c. water, 3/4 c. chopped onion, 1/4 c. chopped celery and 1 large can tomatoes, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Place chicken in large pot with water and celery tops.
Boil until chicken is tender.
Remove chicken and set aside until cool. Debone and chop chicken.
Add vegetables, celery, onion, okra, corn, lima beans, mixed vegetables and tomatoes to broth; boil approximately 30 to 40 minutes stirring occasionally.
Add chicken and rice and boil 30 minutes more.
May add water if needed.
