Chicken Fried Rice is an moderately easy dinner. Made with 1 c. diced, cooked chicken, 2 tbsp. soy sauce, 1 c. uncooked long grain rice, 1/4 c. canola oil and 2 1/2 c. chicken broth, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Combine chicken and soy sauce; let stand 15 minutes.
Heat oil over medium heat; add rice and cook until golden brown, stirring frequently.
Add chicken and broth; reduce heat and simmer, covered, for 20 to 25 minutes, or until rice is tender.
Remove cover; stir in onion, green pepper, celery and broccoli.
Cook until liquid is absorbed.
Serve immediately with extra soy sauce.
