Chicken File Gumbo
Chicken File Gumbo is an moderately easy dinner. Made with 3 lb. chicken, 24 oysters (or shrimp), 3 sprigs parsley, minced, 2 qt. hot water and cayenne pepper, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Cut chicken in pieces; wash and wipe dry.
Season well with salt and pepper; brown in hot cooking oil.
Remove chicken; sift flour into hot oil and brown.
Add onion and cook for 2 minutes.
Add chicken, hot water, and a few grains of cayenne pepper; simmer until chicken is tender.
Add oyster or shrimp and parsley; simmer 20 minutes.
Remove from heat and serve with steamed rice.
