Chicken Enchiladas
Chicken Enchiladas is an moderately easy dinner. Made with 8 large tortilla shells, 1 pt. sour cream, 3 c. chopped cooked chicken, 2 c. shredded cheddar cheese and 1 small jar black olives (optional), this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Mix together everything but the salsa.
Stuff mixture into tortilla shells evenly and wrap.
Place enchiladas seam side down in baking dish (9 x 13-inch).
Cover with aluminum foil and bake for 20 minutes at 375Β°.
Remove from oven and immediately pour salsa over top.
(Low-fat sour cream and cheese can be used in this recipe.)
