Chicken Curry
Chicken Curry is an moderately easy dinner. Made with 1 onion, finely chopped, 1 c. butter, 1 tbsp. curry powder, 1/4 green pepper and 1 garlic clove, crushed, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Saute onion in butter.
Add curry powder and stir in flour. Cook 2 to 3 minutes, then add chopped garlic and green pepper. (Mixture will be very thick.)
Add chicken broth and evaporated milk.
Simmer slowly until thickened (about 15 to 20 minutes). Season with salt and pepper to taste.
Add chicken.
Serve over rice.
Suggested condiments: chopped eggs, bacon bits and peanuts.
Sauce without the chicken added freezes well.
