Chicken Croquettes
Chicken Croquettes is an impressive dinner you can prepare in about 1 hour 2 minutes. Made with pt. cooked, deboned and finely chopped chicken, c. finely chopped onion, egg, margarine and c. flour, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
In a medium to large saucepan, melt 1/4 stick butter or margarine and stir in 1/4 cup flour until smooth.
Add 1 cup milk and stir at a low boil until thickened and leaves sides of pan (about 2 minutes).
Remove pan from burner.
Add to this white sauce the chicken, onion, 1 egg, 1/2 cup fine bread crumbs, parsley, poultry seasoning, salt and pepper.
Blend well. Refrigerate at least 1 hour.
