Chicken Casserole
Chicken Casserole is an moderately easy dinner. Made with 4 whole chicken breasts, boned, skinned and cut into cubes (do not precook, soak in hot, salt water for 5 minutes), 1/2 lb. fresh mushrooms, 1 c. light mayonnaise, 1 c. mushroom soup, undiluted and 1 1/2 c. celery, sliced thinly, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Mix all ingredients and put into a 9 x 12 x 2-inch casserole dish and top with 2 cups Pepperidge Farm cornbread stuffing mix, tossed with 1/2 cup melted light margarine.
Bake at 350Β° for 45 minutes to 1 hour until lightly brown.
