Chicken Breasts with Prosciutto

Split breasts in half (can leave whole), remove bone and dust with flour.
Heat oil and butter; add garlic, brown and discard. Add chicken.
Brown thoroughly.
Season with salt and pepper.
Add Prosciutto, rosemary, bay leaf and mushrooms.
Cook 3 to 4 minutes to saute mushrooms.
Add wine and simmer gently for about 1 minute.
Add tomato paste mixed with water; mix well.
Transfer to baking dish.
Bake at 350Β° for 20 to 30 minutes or until tender, basting occasionally so chicken will be well glazed with sauce. Yields 6 servings.
