Chicken "And" Dumpling

Cut up hen.
Place in large pot.
Add 1 1/2 teaspoons salt. Bring to a boil.
Decrease heat.
Cook slowly until meat is tender. Debone chicken.

Reserve broth.

Cut in shortening; add milk to make a soft dough.
Roll out to 1/4-inch thick on floured board.
Cut dough in 1-inch squares.
Sprinkle with flour.
Bring broth to a brisk boil.
Drop 1-inch dough squares slowly into broth.
Cover tightly (no peeking).
Decrease heat to slow simmer 40 minutes. Add chicken and serve.
