Chicken Ala Glekas
Chicken Ala Glekas is an moderately easy dinner. Made with 2 1/2 lb. split fryer, in serving pieces, 1/4 c. lemon juice, 1/4 c. olive oil, 1 tbsp. salt and 1 tsp. pepper, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Rinse and clean chicken; dry with paper towels.
Mix salt, pepper and oregano together.
Rub seasoning mix on both sides of chicken.
Place chicken in a roasting pan with the skin up. Sprinkle mix of oil and lemon juice on top of chicken.
Bake at 400° for 25 minutes or until golden brown.
Turn chicken on other side and add 1/4 cup water; continue baking at 400° for another 20 to 25 minutes.
Serve hot.
