Cherry Vanilla Fudge
Cherry Vanilla Fudge is an moderately easy dinner. Made with 3 c. sugar, 1/2 tsp. salt, 1 c. light cream or evaporated milk, 1/2 c. milk and 1/4 c. light corn syrup, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Combine sugar, salt, cream, milk, corn syrup and butter in large heavy saucepan or skillet.
Cook over medium heat, stirring constantly until mixture comes to a boil.
Continue cooking, stirring occasionally until candy thermometer reaches 238° (soft ball stage).
Remove from heat and cool (100°).
Add vanilla. Beat briskly until fudge thickens and begins to lose its gloss. Stir in cherries.
Pour into buttered 8-inch square pan.
Cool and cut into squares when firm.
This fudge is pretty to serve at Christmastime.
Makes 1 3/4 pounds.
