Cheesy Potatoes
Cheesy Potatoes is an easy dinner. Made with 5 medium-size potatoes, sliced, 1 large onion, chopped, 3 c. water, salt and pepper to taste and cheese (any kind you like; i like velveeta and mozzarella), this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

In large frying pan, put potatoes and onions; pour water over them.
Salt and pepper.
You can add other herbs, if wished. Simmer potatoes, covered, for about 20 minutes or until soft and can cut into with fork.
Place cheese on top of potatoes and put cover back on.
Turn heat to low. Let cheese melt, takes only a few minutes.
Then they are ready to serve.
