Cheesy Potato Soup
Cheesy Potato Soup is an moderately easy dinner. Made with 3 medium potatoes, peeled and quartered, 1 small onion, finely chopped, 1 c. water, 1 tsp. salt and 3 c. milk, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Cook potatoes, onion, celery and carrots in 1 cup water and salt until tender.
Don't drain.
Mash slightly.
Stir in milk. In small bowl, mix melted margarine, flour, parsley and pepper. Stir into potato mixture.
Cook and stir until bubbly.
Remove from heat and stir in cheese.
Stir until cheese is almost melted. Makes 5 to 6 servings.
