Saute first 4 ingredients.
Blend in flour, mustard and chicken stock.
Cook 5 minutes.
Blend in Cheddar and Parmesan cheeses and seasonings.
Simmer 30 minutes.

Can sprinkle more Parmesan/Romano cheese on top when serving.
