Cheese Cake
An icebox cheesecake set with lemon jello and lightened with whipped evaporated milk, all on a buttery graham crust. Cool, airy, and bright with citrus.

Mix together margarine, powdered sugar and crackers.
Use an oblong dish or pan and press cracker crumbs in the bottom.
Be sure to save some for the top of the filling.
Beat evaporated milk chilled until stiff.
Mix together lemon jello and water, then mix cream cheese, sugar and vanilla.
Combine the two mixtures together and beat well.
Add filling to cracker crust and top with remaining crackers.
Chill and store in refrigerator.
