Cheddar 'n Turkey Potato Pie
Cheddar 'N Turkey Potato Pie is an moderately easy dinner. Made with 8 oz. mushrooms, sliced (optional), 1/4 c. chopped onion, 3 tbsp. parkay margarine, 1/4 c. flour and 1/4 tsp. each: tarragon and pepper, this recipe delivers authentic, satisfying flavors. Cook and stir mushrooms and onion in margarine over medium-high heat for 3 minutes.
Stir in flour, tarragon and pepper.
Gradually stir in broth and milk; cook, stirring frequently until mixture thickens and comes to a boil, about 5 minutes.
Reduce heat to low; stir in turkey, mixed vegetables and 1 cup of cheese.
Simmer for 5 minutes.
Stir 3/4 cup of cheese into hot mashed potatoes.
Spoon turkey mixture into 1 1/2-quart casserole.
Top with potato mixture.
Place under heated broiler for 5 minutes.
Sprinkle with remaining cheese and paprika.
Place under broiler for 2 minutes.
