Charleston Red Rice
Charleston Red Rice is an moderately easy dinner. Made with 2 c. raw, long grain rice, 6 c. boiling water, 3 tsp. salt, 6 slices lean bacon and 2 medium onions, chopped fine, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Cook rice in 6 cups salted water until light and fluffy, not soft and sticky.
Fry bacon until brown and crisp.
Saute onions in 4 tablespoons of bacon fat until clear.
Add tomato sauce and paste, sugar, Worcestershire sauce and hot sauce and cook slowly for 10 minutes.
Place the cooked rice in a buttered baking dish and stir all seasonings in rice.
Place in oven and bake at 325Β° for 45 minutes.
Crumble bacon over top.
Makes 10 to 12 servings.
