Chantilly Potatoes
Chantilly Potatoes is an moderately easy dinner. Made with 6 potatoes (medium to large), 8 oz. sour cream, 1/2 c. onion, diced, 1 can cream of chicken soup (undiluted) and 1/3 c. butter, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Boil the potatoes and grate after they have cooled completely. Combine the sour cream, onion, soup, butter and 1/2 of the cheese and add to the grated potatoes.
Salt and pepper to taste and mix well.
Place in a 1 1/2 or 2-quart casserole dish.
Spread the remainder of the cheese on top.
Sprinkle parsley over top, if desired, for color.
Bake at 325Β° for 20 to 25 minutes.
