Catfish with Salsa
Catfish With Salsa is an easy dinner. Made with 8 catfish fillets, 16 tbsp. thick and chunky salsa, 1 large vidalia onion, cut in rings, 1 large bell pepper, cut in rings and salt and pepper, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Salt and pepper fillets.
Top each with 2 tablespoons of salsa, 1 ring each of bell pepper and onion.
Wrap each fillet in heavy-duty tinfoil.
Put catfish wrapped in tinfoil on charcoal grill over hot coals and cook 30 to 50 minutes, depending on heat of grill.
Spray foil lightly with Pam before putting fish on it. On our grill they cooked in 30 minutes and were delicious.
